In the hot Yucatán, there are plenty of options for everyone to cool down, and one of the most typical ways to do so while at the beach is with coconut bolis sold in ports. Whether from mobile carts, coastal candy stands, or small shops, this dessert can be found everywhere. Thanks to Yucatán's warm and humid climate, coconut is a plant that grows along the entire coast, and due to its versatility, it can be used in various ways. To prepare the coconut bolis, the pulp needs to be extracted and cut into small pieces to be blended with water. Then, the mixture is strained to separate the fibre from the liquid, which will later be added back to give texture to the boli. Evaporated milk, whole milk, and sugar are also added. Once the mixture is ready, it is carefully served in long plastic bags and tied at the end, ready to spend a few hours in the freezer until solid. That's how they will be ready to enjoy by making a small hole in one of the corners. Enjoy!
