Grouper is one of the species that stands out as the main fishing alternative in the Gulf of Mexico and the Caribbean Sea, with Yucatán contributing 70% of the national production. This gives social and economic relevance to the ports along the Yucatecan coast. Additionally, due to its high nutritional value, grouper is consumed in various dishes, one of which is ceviche. The preparation involves placing the fish in a deep container with lime juice, salt, pepper, and olive oil. It is stirred for five minutes and refrigerated for a couple of hours to allow the grouper to marinate well. Before serving, chopped tomatoes, onions, cilantro, and habanero chilli are added to the mixture to combine all the ingredients. The ceviche is then accompanied by corn tostadas and is ready to be enjoyed.
