Mondongo, derived from the Maya words "u tsuuykel wakax meenta'an tia'al jaantbil," each of which represents the preparation of this unique dish typical of the state of Yucatán, enjoyed mostly on Sundays, which is a thick soup made with beef tripe and hooves, accompanied by red chilies that give it that spicy flavour and reddish colour that everyone loves.
