The vegan Polcán emerges through the Polcán Fair, which aims to make this dish a gastronomic icon representing Pisté, where it took place in September 2022. Choko Coffee was awarded first place for innovating this dish with a vegan twist. It is prepared with white corn masa shaped into an oval with a filling of white beans and sikilpak. It is then fried with vegetable oil until golden on the outside. Once ready, it is opened in the middle to add the filling, which consists of a mix of diced sautéed vegetables such as chayote and carrot. It is served with purple onion and roasted tamulated chilli for a flavorful experience. This well-thought-out dish aims to cater to vegans and vegetarians as well.
