The traditional cook Elsa Herrera, originally from Muna, has maintained a passion for traditional cuisine for several decades, specializing in the handmade preparation of tortillas. However, she goes beyond the ordinary by adding other natural ingredients to give the tortillas colour and flavour. The Mayan culture considered corn a sacred food, being the dietary staple in the region and used in various dishes and beverages. This is the case with the colourful handmade tortillas cooked on firewood, giving them the unique flavour that characterizes Yucatán. The ingredients used for these tortillas are sourced from an organic garden, including beets, carrots, chaya, among others. You can get these tortillas every Saturday at the "Slow Food" market located in the Colon Shopping Center, where this traditional cook attends each week to sell her product.
