Dzotobichay is composed of words of Maya origin: ts'o tobil chay, which means "cooked corn dough with chaya," and is a variety of the popularly known brazo de reina. This traditional dish brings together a diversity of Yucatecan ingredients, and is a type of tamale. To prepare the dough, pork lard and salt are added, as well as chopped chaya leaves and boiled egg. It can also include a creamy pumpkin seed paste, or sikilpak, inside. All of this is wrapped in a banana leaf and placed in a tamale steamer to cook over the fire. To serve this dish, the hot tamale is presented and bathed in a red tomato sauce, which only enhances the flavours of the dzotobichay, to be enjoyed hot and freshly made.
