Yucatecan Mechado is a stew originally made with pork, turkey, and free-range chicken; using all three meats gives the dish its unique flavour, although currently, families cook it with the meats they have available at home. Another important ingredient is the white seasoning used to marinate the meat, which is a blend of spices used to season this and several other dishes in the state. After slow-roasting the three meats with onions, garlic, and xkatik chilli, they are combined in a pot with capers, chickpeas, raisins, and saffron; optionally, ball cheese can be added. The stew is cooked for four hours and served hot with handmade tortillas.
