Achiote is a plant native to America and the main ingredient in many dishes from the southeast region. It has been used since pre-Hispanic times, and during this experience, you will learn about its use and preparation in Yucatecan cuisine. Upon arrival at the reception of Cenote Pueblo Fantasma, you will be welcomed in Mayan and Spanish. Then, you will learn about the achiote plant when it's young and also when it's ready for use. You can grind it in a stone mortar to marinate the meat that will be used for cochinita pibil, all under the guidance of local people. Once the preparation is ready, the dish is placed in the pib (hole in the ground), where it is cooked for two hours with hot wood, resulting in a soft and flavorful meat, ready for you to taste at the restaurant of Cenote Pueblo Fantasma.
