It is a real pleasure to taste Yucatecan food and drinks at the Eco Hotel Nueva Altia, one of which is the delicious sweet potato and fermented corn atole. The preparation process begins when the traditional cook selects the corn kernels and soaks them in water for three days. Once the time has passed, pieces of sweet potato are added, then the mixture is ground to obtain a dough, which the cook prepares over low heat. The result is an aromatic and delicious beverage, "sweet potato atole," served in typical gourds to taste while relaxing surrounded by the characteristic nature of Nueva Altia.
