Pipián sauces are a type of thick sauce that derive their name from pumpkin seeds, which, when toasted and ground, are one of their main ingredients and give this sauce a smooth texture. Another key ingredient is achiote, which provides an elaborate flavour and, being a natural colouring agent, gives the sauce a reddish colour. Among other ingredients, tomatoes, onion, garlic, epazote, salt, and pork lard are used. For preparation, the pumpkin seeds are toasted on a griddle along with the lard, allowing the seeds to release their oil and enhance the flavour of the pipián. Then, the pumpkin seeds are ground and blended with the other previously roasted ingredients. The resulting sauce is ready to be added to the protein of your choice and cooked.
