Cocada, also popularly known as palanqueta de coco, is sold along the entire Yucatan coast and in some traditional markets within the state of Yucatan. It is a circular-shaped traditional dessert made of sugar and locally sourced coconut, resulting in a delightful treat. The preparation process involves melting brown sugar in a pan with water and stirring it with a wooden spatula until the water evaporates. Then, diced coconut is added to the mixture, allowing it to cook while absorbing the sugar and evaporating any remaining liquid. Throughout the process, the mixture must be stirred to prevent burning. Once the mixture reaches a thick consistency, it is divided into portions on wax paper, and with the help of the wooden spatula, it is flattened to form the palanqueta. The cocada is left to cool and crystallize before it is ready to be enjoyed.
