Specifically, it is the case of Doña Mónica Puc, who started making it for her own consumption over 13 years ago. She began sharing this dessert to accompany dishes at parties, introducing the jelly to others and starting to receive orders for different events. Chaya leaves are commonly used in Yucatecan cuisine and have helped her take care of her health as they contain a high percentage of iron. For the preparation, she uses gelatin, lime, chaya leaves, and water or milk, depending on the desired presentation.
