Chaya jelly is a fusion that emerged from the search for new options for those who need to take care of their health. Specifically, it is the case of Doña Mónica Puc, who started making it for her own consumption over 13 years ago. She began sharing this dessert to accompany dishes at parties, introducing the jelly to others and starting to receive orders for different events. Chaya leaves are commonly used in Yucatecan cuisine and have helped her take care of her health as they contain a high percentage of iron. For the preparation, she uses gelatin, lime, chaya leaves, and water or milk, depending on the desired presentation. You can also request if you want your jelly to have small pieces of chaya or if you prefer it to be dissolved in the mixture. In any of its presentations, don't miss out on trying this jelly!
