No. 211 Preparation of Tóoksel in Chichimilá

Tóoksel, which means "cooking on stones" in Mayan, is a traditional dish from the region. It is made with ibes (white beans), ground pepita (pumpkin seeds), and onion leaves. You will have the opportunity to enjoy the preparation process, starting with a warm welcome, followed by learning about the origin of the ingredients found in the milpa (cornfield), which will be used for this dish. Additionally, you will learn the technique used to identify the stones that are suitable for cooking the ibes. You will gather onion leaves, cook the ibes, and participate in the toasting and grinding of the pepita, using a traditional hand mill. You will also learn the proper placement of the stones in the hearth to heat the mixture of cooked ibes with spices and make handmade corn tortillas. Finally, you will taste the delicious tóoksel along with refreshing beverages such as horchata, hibiscus tea, or seasonal fruits. Experience this culinary adventure with your loved ones!
