Two of the most representative dishes of the state of Yucatán are salbutes and panuchos, which are highly popular and widely sold in the region. These snacks are prepared in different ways. Salbutes are made with masa, which is shaped by hand or flattened using a "maricona" (a tool for making tortillas), and then fried. Panuchos, on the other hand, are made with tortillas filled with beans and fried until golden. Both are garnished with lettuce, shredded roasted chicken, pickled onions, tomatoes, avocado, and cucumber. They are served on a flat plate accompanied by habanero sauce and natural beverages such as hibiscus tea (jamaica) and horchata. Enjoy this dish at economical kitchens, market stalls, and restaurants. It's a must-try snack when visiting Yucatán.
