At the “Los Negritos” restaurant, you can taste a delicious fusion dish called "Raya a la Vizcaína," which has as its main ingredient the painted or white stingray. The term "a la vizcaína" refers to a mixture of ingredients that form a sauce, which is made with tomato, white onion, xcatik chilli, habanero chilli, and sweet chilli, all sautéed in vegetable oil. To prepare this dish, the wing of the stingray is used, which is washed until all the sea salt is removed, and then it is cooked in water with epazote leaves. Similarly, the potato is cooked in another pot. Once they are cooked, the stingray is shredded and the potato is cut into cubes. Both ingredients are mixed with the sauce and simmered to combine them. The presentation of the dish consists of a bed of ray with cubes of cooked potato, fried plantain, and avocado slices, and for the final touch, lime and habanero chilli. You can enjoy this dish all year round at the “Los Negritos” restaurant, located in Río Lagartos.
