Located in a mansion in Tixkokob dating back to the late 18th century, you will find the Pueblo Pibil Restaurant, a place known for cooking its food underground, over a fire fueled by local woods such as chukum and catzín, and with oak and jabín leaves. Among the dishes they prepare and bury every day are relleno negro, mondongo a la andaluza, cochinita pibil, queso relleno, and San Simón Tixkokob-style. One of their special dishes, also cooked underground, is the venison pipián. It consists of pieces of venison cooked in water with pumpkin seed sauce, seasoned with tomato, epazote, house spices, and lard, accompanied by handmade tortillas, French bread, and chilli. The white-tailed deer used for the dishes at Pueblo Pibil Restaurant are raised on a farm and sold under the necessary permits. Witness the magic of the underworld's fire by observing the unearthing process in the earth ovens, which takes place every day at 13:30.
