Salpimentado is a typical dish from the region made with pork pieces, pork ribs, chicken pieces, and vegetables. First, the pork is boiled in a pot of water, and any foam that forms is removed as needed. Then, the chicken is added when the pork is partially cooked, seasoned with cilantro, blended green onion, black pepper, roasted garlic, oregano, cloves, cinnamon, and salt. Next, the washed, peeled, and diced vegetables are incorporated, except for the plantain, which is not peeled. The juice of half a lime is squeezed into the dish, and it is complemented with xcatic chilli and green onions. It is served in a deep plate accompanied by chopped cilantro, lime, habanero chilli, powdered pepper, and handmade tortillas.
