The dish "ibes con puerco" is a variation of "frijol con puerco" (pork with beans). The difference is that it is prepared with white ibes beans, epazote, garlic, tomato, onion, and pork. In a pot with hot water, the ibes beans and a sprig of epazote are added and cooked for approximately one hour, allowing the beans to burst and the broth to thicken. Then, onion, chilli, garlic, and tomato are roasted to make the tamulada sauce that accompanies this dish. The pork is cubed and added to the pot. Additionally, cilantro, onion, and radish are finely chopped to complement the dish, along with white rice. This delicious dish is served in a deep plate accompanied by onion, cilantro, radish, lime, rice, and previously prepared habanero sauce. Enjoy this dish exclusively in Yucatán!
