Polcan, which comes from the Mayan words "pool" (head) and "kaan" (snake), refers to the head of a snake, in the shape of an oval. This peculiar dish is made of nixtamalized dough with tender ibes, ground pumpkin seeds, green onion, and filled with diced poc-chuc. You can enjoy this delicacy with charred red tomato salsa, chopped cabbage, and pickled onion.
