Xupik is a traditional dish from Espita, also known as "xpak'ik," which translates to "chicken adobo in chilli" in English. This unique dish is prepared using chicken, pork, tomatoes, dried red chilies, pepper, salt, and epazote. First, the chicken and pork are cut into regular pieces, marinated with salt, and sautéed in a pot for 30 minutes. Then, they are cooked with a small amount of water while the chilies are deveined and boiled twice in another pot of water to moderate the spiciness. The chilies are then blended with garlic, tomatoes, and pepper, and added to the meats along with epazote and salt to taste. Finally, the dish is cooked until it reaches the desired thickness.
