That's why their menu offers a variety of snacks made with the state's native corn, allowing you to explore the different varieties of Yucatecan corn. At Pancho Maíz, you can not only come to taste the food but also take part in a gastronomic experience that includes a class on making totopos (tortilla chips) and chilaquiles (tortilla chips with salsa). During the class, you'll receive a brief explanation of the history, planting processes, grain selection, nixtamalization, tortilla preparation, and other products made from corn. As an extra activity during harvest or planting seasons, you may have the opportunity to visit a cornfield and learn even more about native corn.
