Queso Relleno is an example of the fusion of flavours in Yucatecan cuisine, due to the multicultural origin of the ingredients used in this dish. As its name suggests, the star ingredient is Edam cheese, popularly known as "queso de bola," which is very traditional in Yucatecan gastronomy. The preparation consists of removing the centre of the cheese to stuff it with a mixture of ground pork, boiled egg, almonds, olives, raisins, and capers. All of this is cooked in a "bain-marie," and the dish is served with a white sauce known as "ko'ol" and topped with tomato sauce. A delicacy that justifies the effort of its preparation.
