Turkey in San Simón is a traditional dish from the Yucatán Peninsula, made with a variety of ingredients including garlic, pepper, onion, tomato, sweet chilli, raisins, capers, ground meat, turkey, among others. Its preparation begins by cooking the turkey in a pot with roasted garlic, salt, oregano, and pepper. On the other hand, a mixture is made with roasted onion, roasted tomato, sweet chilli, olives, raisins, and capers, all cut into cubes and then cooked in a skillet. This mixture is added to the turkey along with bell pepper, "recado para todo" (a Yucatecan spice blend, named seasoning for everything), broth, and peas. Additionally, a meat mixture is made using ground meat, tomato, sweet chilli, olives, capers, raisins, and diced boiled egg whites, which is wrapped in banana leaves. This peculiar dish is accompanied by fried ripe plantains and sliced potatoes, both fried in oil. Let's not forget the French bread, which is baked for a few minutes. After all this process, the turkey is removed from the broth, coated with red "recado", and roasted. Finally, the meat is shredded and served in a deep plate, accompanied by onion, lime, potatoes, fried plantains, and French bread for tasting.
